And of course I had to try to dehydrate some for later use!<\/p>\n\n\n\n<p>Surprisingly, I couldn&#8217;t find much on how to dehydrate this wonder vegetable, so I was on my own figuring this one out. I was happy with the results, so let me walk you through what I did, so you can dehydrate your own bok choy too!<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Why Dehydrate Bok Choy?<\/h2>\n\n\n\n<p>Having dehydrated bok choy on hand is an easy way to add this delicious vegetable to soups, stir frys, and in what ever else your heart desires. I&#8217;m excited to be able to add a little bit to some soup whenever I need a quick lunch at home!<\/p>\n\n\n\n<p>Another reason dehydrated bok choy is great, is because it takes up so much less space. A large one can be dehydrated down to a pint size jar, leaving more space in your refrigerator and keeping it for a longer time.<\/p>\n\n\n\n<p><strong>Have I convinced you to try this yet? We are going to blanch* the bok choy. Set this aside.<\/li>\n<\/ul>\n\n\n\n<p>*Blanching vegetables before preserving  them by freezing, canning, or dehydrating can preserve their flavor, color and texture. It&#8217;s not necessary for safety but does make a difference in the finale results.<sup data-fn=\"0706f326-53a1-4291-89bc-28a6c6eb0461\" class=\"fn\"><a href=\"#0706f326-53a1-4291-89bc-28a6c6eb0461\" id=\"0706f326-53a1-4291-89bc-28a6c6eb0461-link\">1<\/a><\/sup><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Bring a large pot of water to a boil. Add in the bok choy, and allow the water to return to a boil.<\/li>\n\n\n\n<li>Boil for 1 minute. data-recipe=\"2018\"><h3 class=\"wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Instructions<\/h3><div class=\"wprm-recipe-instruction-group\"><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2018-step-0-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Start by cutting the root part off the bottom of your bok choy.<\/span><\/div><\/li><li id=\"wprm-recipe-2018-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Pull apart all of the sections and wash thoroughly. <\/span><\/div><\/li><li id=\"wprm-recipe-2018-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Chop  into small pieces. Keep in mind how you intend to use it and that the larger the pieces, the longer it will take to dry.<\/span><\/div><\/li><li id=\"wprm-recipe-2018-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Get a large bowl out and fill it about 2\/3 of the way full with cold water and ice. We are going to blanch* the bok choy. Set this aside.<\/span><\/div><\/li><li id=\"wprm-recipe-2018-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Bring a large pot of water to a boil. Add in the bok choy, and allow the water to return to a boil.<\/span><\/div><\/li><li id=\"wprm-recipe-2018-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Boil for 1 minute. Drain, and immediately transfer to the ice water that you&#39;ve prepared.<\/span><\/div><\/li><li id=\"wprm-recipe-2018-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Remove as much of the excess water as possible using a colander or salad spinner. And pat dry with a clean cloth or a paper towels.<\/span><\/div><\/li><li id=\"wprm-recipe-2018-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Spread the bok choy onto the dehydrator trays in a single layer.<\/span><\/div><\/li><li id=\"wprm-recipe-2018-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Dehydrate between 122\u00b0-125\u00b0F for 6-8 hours.<\/span><\/div><\/li><li id=\"wprm-recipe-2018-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Once dry, it should should be dry, brittle, and easily snap when bent.<\/span><\/div><\/li><li id=\"wprm-recipe-2018-step-0-10\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Once the bok choy is has cooled, store in a air tight container for a shelf life for up to one year. <\/span><\/div><\/li><li id=\"wprm-recipe-2018-step-0-11\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\"><strong>To Re-Hydrate<\/strong>: Simply add to cooking soup or re-hydrate in a bowl of hot water for 5- 10 minutes.<\/span><\/div><\/li><\/ul><\/div><\/div>\n<div id=\"recipe-video\"><\/div>\n<div id=\"recipe-2018-notes\" class=\"wprm-recipe-notes-container wprm-block-text-normal\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Notes<\/h3><div class=\"wprm-recipe-notes\"><span style=\"display: block;\"><em>*Blanching vegetables before preserving them by freezing, canning, or dehydrating can preserve their flavor, color and texture.
